PHILIPPE PACALET

In the heart of Beaune, Philippe Pacalet watches the world through his window with a mix of dry wit and formidable sincerity. Along with his wife, Monica, he has spent over two decades crafting wines that have become global benchmarks for purity and energy.

To understand the wine, one must first understand the man: a winemaker who chooses his friends with care and trusts in the honesty of a handshake, valuing it far above the politics of land ownership.

A Heritage of Quiet Revolution

Philippe’s story is rooted in the "agrarian and libertarian" uprising of 1970s Beaujolais. As the nephew of the legendary Marcel Lapierre, he spent his summers working the vines of Villié-Morgon from the age of 14. While he was "born at the beginning of natural wine, " Philippe approaches his craft with a refreshing lack of fanaticism. His formal education was equally foundational. Under the mentorship of Jules Chauvet—the father of French natural wine— Philippe earned his National Diploma in Oenology (DNO). It was here he mastered the science of indigenous yeasts and developed a professional rigour and an exceptional palate that remain his primary tools today.

The Radical Apprenticeship

In 1991, Philippe arrived in the Côte d’Or with a gesture that has since become lore. Hearing that Henry-Frédéric Roch was seeking a manager for the fledgling Domaine Prieuré-Roch, Philippe presented a bottle of Morgon he had crafted with Lapierre as his CV. Roch recognised his talent immediately, appointing him as régisseur. For the next decade, Philippe led a "small revolution" in Burgundy, introducing organic farming and a cellar philosophy rooted in indigenous yeasts and zero added sulfur—practices that were visionary for the region at the time. In 2001, he transitioned to his own project, pioneering a new model perfectly adapted to a Burgundy of shrinking, fragmented family estates.

The Grammar of Absence

A Pacalet wine is defined as much by what is absent as by what is present. He adheres to a strict "rule of three" to ensure the terroir is never masked:

  • Zero Added Sulfur: Vinification relies entirely on the indigenous yeasts present on the grape skins; the wine must express itself "without a safety net".

  • Whole-Cluster Fermentation: By vatting whole bunches, Philippe uses the stems as a "freshness enhancer, " providing a delicate mouthfeel and a unique, fine-grained tannic structure.

  • Neutral Oak Only: He avoids new wood entirely, using only fûts d'occasion (used barrels) for élevage. This prevents a "woody veil" from obscuring the mineral tension and vivid fruit energy that are his hallmarks.

A Living Legacy

Today, the Pacalet style remains a pursuit of "appetising freshness". This
mission is now shared with his son, Reno, who has joined the cellar and is already producing wines of great promise.

Together, they maintain a quiet ritual: after tasting from a barrel, they place a small pebble on its head - a humble homage to the limestone soils that give these wines their life.
