Before establishing his domaine in 2023, Simon Faure worked as an electrician. Drawn by a passion for wine and the exceptional terroirs of the Mâconnais, he acquired three hectares of vineyards and released his inaugural vintage of 10,000 bottles of Chardonnay. Despite being a newcomer, his debut immediately showcased remarkable precision and purity. Today, Simon's philosophy is centred on producing low-intervention wines that faithfully express the character of each vineyard.
Every parcel is hand-harvested into small 10kg crates before spending the night in a cold room and being pressed whole bunch using the traditional Champagne pressing method. Fermentation takes place naturally in seasoned French oak barrels, with minimal racking and no additions throughout vinification. Sulphur is used only sparingly at bottling, preserving freshness, precision and a true sense of place.
Although still at the beginning of his journey, Simon is already working across some of the Mâconnais' most celebrated villages. Guided by a deep respect for nature and meticulous attention to detail, he continues to refine his craft with every vintage, establishing himself as one of the region's most exciting young vignerons.
