Fanny Sabre is one of Burgundy’s most exciting and quietly revolutionary winemakers. Her journey began in her twenties, when she made the unexpected leap from studying law to winemaking following the untimely passing of her father. Inheriting a small yet precious mosaic of vineyards around Beaune – including the quietly exceptional Clos des Renardes – Fanny took up the mantle with purpose, care, and a bold vision.

Under the mentorship of natural wine pioneer Philippe Pacalet, Fanny Sabre adopted a philosophy rooted in minimal intervention and deep respect for terroir. Her winemaking is guided by simplicity and purity: fermentation with indigenous yeasts, little to no added sulfites, no fining or filtration, and aging in neutral oak barrels to retain the delicate phenolics and floral expression of Pinot Noir and Chardonnay.

White grapes are gently pressed in a pneumatic press before fermenting in old barrels, while red grapes are often treated with semi-carbonic maceration in wooden or concrete vats. Whole-cluster pressing and long, quiet ageing for at least 12 months in old oak barrels contribute to a style defined by elegance, energy, and precision.

Over the past two decades, Fanny has carved out her place as a reference point in Burgundy for clean, vibrant, and terroir-transparent wines. Her cuvées offer a soulful counterpoint to the increasingly speculative nature of the fine wine market – wines crafted not for collectors’ cellars, but for drinking, sharing, and celebrating.
