New Vintage Release: 2021 Frederic Cossard

” Frédéric Cossard is a legend of natural winemaking in Burgundy, producing cult wines of renowned energy and finesse in a region not short of incredible wines and winemakers. After starting from scratch, he now has 10 hectares of vines across the region, all farmed organically and vinified without any additions. “

Twelve months on from the sold-out 2020 allocation, if you still haven’t heard of Frédéric Cossard, chances are you might have crossed paths with his rare wines when browsing the world’s top restaurant wine lists. If not, now is the time to get acquainted with one of Burgundy’s most dynamic winemakers.

Drawing from his experience as a wine merchant in Burgundy, and stints in the dairy trade, in 1996 Frederic Cossard went on to forge a new chapter in modern winemaking. His wines have an appeal, they’re alive and are an intense pleasure to drink. He is a larger than life character, a man with an infectious joie de vivre and a love of wine that runs deep.

While Cossard wines are still rather niche, they have already a great following in the loftiest circles of Burgundy buyers in Europe and Asia, where most of the tiny allocations reside. Our allocation of 2020 was unsurprisingly oversubscribed.

Across the world, Frederic Cossard’s wines are cherished for their vitality and purity. From top to bottom, Frederic Cossard and his Domaine de Chassorney deliver compelling examples of pure Pinot and Chardonnay fruit, bearing the signature a true legend of the low intervention movement.

2021 VINTAGE – SECURE YOUR ALLOCATION

Frederic Cossard developed a truly unique recipe. Homeopathic principles inform his farming. Only very old vines (50/70+ years old) in prime plots scattered around burgundy are the source for his raw materials. Only the most pristine fruit makes it to their cellars tucked away amongst the limestone cliffs of Saint-Romain. Whole bunch fermentation à la Leroy/Prieure Roch/Pacalet is a key feature in his winemaking. Very fine compounds, with alluring floral aromas and vibrant, crunchy fruit are extracted and placed at the core of Cossard’s wines. Fermentation and elevage varies wildly, depending on the specific characteristics of each vineyard. Wood of various sizes and age, open tanks, cement eggs, even Georgian Qvevries (Clay Amphoras) are used in the cellar. The aim is to achieve perfect micro-oxygenation in the wines, binding the phenolics into a compact, age-worthy structure, while retaining early approachability.

BOURGOGNE BLANC ‘BIGOTES’
Chardonnay from forty year old vines planted over clay and limestone near the village of Puligny. A wine that is always a real favourite, displaying everything we love about Burgundian Chardonnay, with great balance, gorgeous stone fruits and a clean, salty finish.

SAINT-ROMAIN BLANC ‘COMBE BAZIN’
From a single vineyard of Chardonnay planted high on the steep slopes of Saint-Romain, where you find a high percentage of limestone. This is the domaine’s most iconic wine and it is easy to see why. A Chardonnay of real lift and verve, with a chalky, mineral imprint from the calcareous soils.

PULIGNY-MONTRACHET
An example of just how wonderful Chardonnay from the best vineyards in this storied village can be, though without the trappings of oak, it is an exercise in purity. A little masterpiece from Fred that pairs ripe fruits with a deep, stony minerality. A wine of impeccable power, precision and poise.

BOURGOGNE ROUGE ‘BEDEAU’
Pinot Noir from a number of plots of forty year old vines in and around the village of Volnay and a parcel of fifty year old vines in Nuits-Saint-Georges.

SAINT-ROMAIN ROUGE ‘SOUS ROCHE’
From fifty year old vines of Pinot Noir planted in one of the steepest, shallowest parts of Saint Romain.

SAVIGNY-LES-BEAUNE ‘LES GOLLARDES’
A joyful expression of Pinot from the south facing lieu-dit ‘Les Gollardes’. This parcel is located right in the middle of a slope and offers a textbook expression of the appellation. Fruit forward, pretty and perfumed, it is a wine of immense charm in a beautiful place.

VOLNAY
Pinot Noir from the Cossard’s holdings in Volnay spent just a few days on skins, before being pressed off to Georgian qvevris for élevage. The result is a truly unique expression of Volnay, freed from the trappings of oak, it wows with gorgeous red fruits, fine tannins and fistfuls of exotic spice.

VOLNAY 1ER CRU ‘LES LURETS’
From a small parcel of forty year old vines of Pinot Noir that the Cossards farm in the premier cru ‘Les Lurets’, this remains one of our favourite wines from the appellation. This unique year has produced a deeper, darker and more intense expression of the site, with dark fruits and neat tannins suggesting it will age with real aplomb.

VOLNAY 1ER CRU ‘LES RONCERETS’
Year in year out the Pinot Noir Fred makes from this premier cru parcel are amongst our favourites in his entire range. With beautiful floral aromas and a hint of spice, this could only be from Volnay.

GEVREY-CHAMBERTIN ‘LES GENEVRIÈRES’ QVEVRIS
Pinot Noir from a parcel of forty year vines from a lieu-dit in Gevrey, that after just a few days fermenting as whole bunches, was pressed off to Georgian qvevris for élevage. This is compact and elegant with the time spent in these vessels adding texture and nuance to its layers of dark fruits and sanguine spice.

CHAMBOLLE-MUSIGNY ‘LES HERBUES’
From a fifty year old lieu-dit planted over clay and limestone; even in this warmest of vintages, Fred has crafted a pitch perfect wine of sweet, vibrant fruit and exotic fragrance. Quintessentially Chambolle, this is a Pinot Noir of real finesse that will age for many years to come.

VOSNE-ROMANÉE ‘LES CHAMPS PERDRIX’
Pinot Noir from a parcel of sixty year old vines planted over clay and limestone that sits just three metres above La Tâche. Compact, elegant and full of little red fruits, every detail seems to be in place and whilst astonishingly open now, it will reward drinkers for many years to come.

MOREY-SAINT-DENIS ‘LES CHAMPS DE LA VIGNE’ QVEVRIS
Pinot Noir from sixty year old vines in the lieu-dit of Les Champs de la Vigne, Morey-Saint-Denis. Aged in Georgian qvevri, this is intensely structured but showing some openness with beautiful red and black fruit, exotic spice and wonderful silkiness.

MOREY-SAINT-DENIS 1ER CRU ‘LES MONTS LUISANTS’
From a tiny parcel of seventy year old vines planted with the rare Pinot Fin, just above the Grand Cru Clos de la Roche. Lighter than previous vintages in the glass, as ever it is a hauntingly complex, beautiful expression of Pinot that offers layer upon layer of intrigue.
