As exclusive UK agents for Champagne Savart, Wine Source have been grateful to assist with placement and distribution, whilst witnessing the thrilling rise of his wines. The only fly in the ointment; nobody orders Savart just once, and so today it’s a real challenge of restraint and diplomacy allocating his wines.

“It is the new philosophy of Champagne Savart, Vilmart, Bérêche, Jerome Prevost and Emmanuel Brochet. RM (grower champagne) is finished. It’s now NM (neo-négociant)….If I want a hectare in Le Mesnil sur Oger, it is €2 million. It is very expensive. I prefer to buy the grapes.’

A Meeting
OF GREAT MINDS

Mirroring the shift in Burgundy, top winemakers in the Champagne region are transitioning from micro-production domaines into ‘Neo-Négociant’ territory. For Frédéric Savart, the economics of remaining an RM didn’t make sense. Stretching the imagination beyond his fifty Premier Cru micro-plots (across four hectares in Écueil and Villers-aux-Noeuds, south of Reims, Champagne), to collaborate with Champagne merchant Drémont Père & Fils; the Éphémère couer de rosé (heart of the rose) cuvée was born.

The composition of vines and plots within the assemblage of Champagne Éphémère differ according to the vintage. Fruit for this rosé cuvée is specially selected by its founders and this particular release comes from old vines growing on some of the finest plots in Aÿ.

Each of the vintages to date have been a tremendous success, cementing a reputation that continues to grow. Notably, the Éphémère 016 is the first to be labelled under the Savart name; a worthy stamp of satisfaction.
