Domaine Florence Cholet, Corcelles-les-Arts (Puligny Montrachet)

Florence Cholet recently returned to take over the domaine that has belonged to her family for four generations, and in 2019 the estate name was formally changed from Domaine Christian Cholet-Pelletier. Widely travelled, Florence has worked across France, the US and Australia, including stints with Chapoutier (Rhône Valley) and Pibarnon (Bandol) and Walla Walla (Washington state USA) and work at an independent laboratory responsible for analysis of virtually all the wines of Burgundy, giving her an unparalleled exposure to the wines of the region. Her winemaking philosophy has developed from these experiences, with a solid base of intuition. Florence has changed many of the original vineyard practices and the domaine now no longer uses pesticides or herbicides, the vineyards are ploughed and since 2017 fermentations have used wild yeasts and the wines have been bottled with only a light filtration. New oak is used sparingly at a maximum of 25%. The Enseignères is from 80-year-old vines below Bâtard-Montrachet.
